Yet another amazing recipe to add to your rotation!
You guys know me. I love easy, simple, and delicious recipes. You guys are busy, you need dinner to go on the table quickly which is why I always want to help make it easy for you to find things you enjoy eating and will help you on your weight loss journey.
In the summer, I love BEETS! I used to compost the beet greens, but recently I've been into utilizing the greens in my meals by wilting them, check out this Frittata recipe if you haven't already.
I was chatting with a co-worker, trying to think of some different ways to utilize the greens in my cooking and he mentioned something brilliant, putting the wilted greens in Indian food!!! What a great idea!!!
I already enjoyed mixing these Indian meals in with these steamed lentils from Trader Joes to make for an easy few lunches but this was a great idea for dinner!
So I stocked up on all of the varieties they had, went to the farmers market to get my beets and got to work.
I washed the beets, separated the stem from the greens, and sautéed the stem in olive oil until soft. Then I chopped up the greens and sautéed them in olive oil as well. To be honest, I did this step ahead of time while I was making something else in the kitchen. Now I have these wilted greens ready to go in my fridge so I can come home from work, throw them in a non-stick pan, add the Indian packet I am interested in, and share them with my husband for an easy mid-week dinner.
So far I am loving the Madras Lentils and Tikka Vegetables. Let me know what you think!
