Spring Frittata For Easy Weight Loss

Weight loss made easy with this seasonal meal that could work for breakfast, lunch or dinner.



Spring 2022 Frittata


You can find me wilting just about anything that is green this spring and summer with olive oil or butter, throwing in eggs, cottage cheese, and some of these sun dried tomatoes in oil for an insane frittata.

I had some chives from my garden and some radish greens for this quick and easy on protocol lunch. I will do this with beet greens, turnip greens, and rainbow chard. To be honest, there isn’t a green I turn down in the summer to use in a frittata like this. It’s the perfect combination of vegetables, protein and fat to keep you full for a long time, especially when you are becoming fat adapted and teaching your body to go 4 to 6 hours between meals.

  • Heat oil or butter in a non-stick pan and wilt your greens. Get crazy with them. You really can’t go wrong with more greens.

  • While wilting, combine cottage cheese (about a ¼ cup, I really don’t measure) two eggs, and about 2 tablespoons of sun dried tomatoes in oil (again I don’t measure, too much work lol)

  • Once the vegetables are wilted, pour over this egg mixture and cover until cooked through.

  • Attempt to flip if you are brave.

Enjoy the heck out of this meal, and eat it until you are satisfied.
