Pumpkin Muffins

While it's not on protocol, this is one of my kiddo's favorite things to eat and one of my favorite hacks to make lunch and breakfast easy. This is one recipe I just had to share with you.



Trader Joes Pumpkin Muffins

  • Every season brings its memories, its nostalgia, along with some seasonal joy food you might want to incorporate into your plan.

  • Fall is a big one. We have pumpkin spice lattes, caramel apples, pumpkin bread, and halloween candy just to name a few.

  • One of the things my son loves this time of year are pumpkin muffins. He’s been asking about them since July.


  • Take a box of this mix from Trader Joe’s and a can of pumpkin puree (My favorite is Libby's... I tried the TJs brand and the consistency and flavor was not as good... per my son.) Mix and bake at 350 for about 20-22 minutes in a greased muffin tin (I use coconut oil spray for this recipe) until a toothpick comes out clean.

  • The best part? You can freeze these bad boys and defrost them in the microwave for easy addition to a kids lunch or as an easy breakfast option throughout the week.

  • I bought 6 boxes because they aren’t around all year.

  • No eggs, no oil, nothing else. Just Mix and bake. I have intel from other Moms that adding a handful of unsweetened chocolate chips is a great addition.
